HUNTSVILLE, Ala. (WAFF) – Restaurants and breakfast joints face egg inspection costs as rising egg prices hit local Huntsville restaurants hard.
The price of eggs increased by almost 60%and some people pay more than $8 for a dozen eggs.
As they say, it takes a lot of eggs to make an omelet, and restaurants should offer omelets and other egg dishes. Managers at Metro Diner in Huntsville say about half of their orders are egg dishes like scrambles, benedicts and sandwiches.
They have to buy eggs by the case. These costs have definitely increased. Some managers say that in the last few months their price for eggs has increased more than three times.
“We’ve seen price increases before, but not as drastically as we’ve raised a plate and a meatloaf, but not an egg plate,” says Kathryn Haynes of Metro Diner.
In some companies, the costs are borne by the consumer. Restaurants like Metro Diner and Blue Plate Café have raised their prices slightly.
“Eggs are really where we make our money because the increase in egg prices has really hit our budget,” explains assistant kitchen manager Sandy Bigham.
Some restaurants may keep the prices the same.
Another Cracked Egg manager says that the giant restaurant chain can keep prices the same because they have a contract with an egg distributor that keeps prices stable.
Rolo owner Christy Parker says she recently raised her menu prices to keep up with inflation, so she can’t justify raising them again when the cost of her eggs goes up.

He says many of his clients are over 65 and living on a modest income. Parker said she went from paying $30 for a box of eggs to about $80.
In the meantime, he says, he is trying to find other ways to cut costs. Many restaurant managers say there is hope on the horizon as they are already seeing prices start to drop.
